- 1 package Smoky Mountain BBQ
- 4 individual pre baked 7 inch pizza crusts
- ½ cup softened cream cheese
- 1 4oz can diced green chilies, drained
- ½ cup thinly sliced bell pepper strips
- ½ cup thinly sliced onion separated into rings
- 1 cup shredded Monterey Jack cheese
Heat oven to 400 degrees. Place pizza crusts on large ungreased baking sheet. Spread each with 2 Tbsp cream cheese. Spoon Smoky Mountain BBQ evenly onto crusts. Top evenly with chilies, bell pepper, onion and cheese.
Bake in 400 degree oven 15 – 20 minutes or until cheese is hot and bubbly. Cut each pizza into 4 wedges. Serves 4.
Super Simple Smoky Mountain BBQ Burrito
- 1 package Smoky Mountain BBQ
- 4 Whole wheat tortillas
- Cole Slaw (either home made or purchased)
Wrap tortillas in aluminum foil. Warm in 350 degree oven for approximately 10 minutes. Spread mayonnaise on tortillas if desired. Spoon Smoky Mountain BBQ down the center of the tortilla and top with coleslaw and roll.
Serve with Baked Beans for a low carb meal! (Shredded cabbage is an option to coleslaw if you are really watching your carbs!)
Makes 4 servings.
Smoky Mountain BBQ Baked Beans
- 1 package Smoky Mountain BBQ
- 5 strips of your favorite bacon
- 1 large onion, chopped
- 1 large can pork and beans
- ½ tsp cloves
- ½ tsp dried mustard
Pre heat oven to 350 degrees. Fry bacon until crisp. Saute onion in bacon drippings. Add beans, cloves, dry mustard and Smoky Mountain BBQ. Place in casserole dish and bake for 45 minutes.
Makes 6 – 8 servings.
